I was experimenting a little bit the other night in search of a light dinner recipe and came up with this balsamic chicken – something G and I really liked and think you might too! We had this tangy and savory balsamic chicken over a simple salad of greens and chopped carrots and used the pan sauce as a dressing over the salad as a whole – it was so good! I think it would also be great standing alone with some steamed veggies and mashed potatoes on the side.. either way, this balsamic chicken recipe is definitely one that i’ll be keeping in my recipe box.
Directions:
2 boneless skinless chicken breasts
2 tbsp olive oil
1 tbsp no salt butter
1/3 cup balsamic vinegar
1 cup water
- Add the olive oil, butter, balsamic vinegar and water to a pan and turn the burner on to medium-high and bring to a boil.
- Lightly salt and pepper the chicken breasts on both sides.
- Add chicken to the pan and cover.
- Cook 5 minutes on each side.
