If you follow along on Instagram, you know that,after a week and a half of falling behind on them, I’m recommitting to eating healthy and keeping up with my workouts! That being said, it’s only fitting that I share one of my favorite healthy recipes. These super easy chicken fajitas can be baked in a sheet pan in one fell swoop – which, of course, makes for fast and easy cleanup!
To cut some carbs and a bit of calories, I like to wrap my fajita mixture in a nice big lettuce leaf but, of course, you can use corn or flour tortillas if you prefer.
- 1 lb. boneless, skinless chicken breast
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large or 2 small onions
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- optional toppings: shredded cheese, cilantro, lime wedges, guacamole, sour cream, salsa
