an easy breakfast or snack.

As a new mom, it’s something that’s constantly on my brain: my milk supply. Since I am the only source of my baby’s nutrition, I’m constantly monitoring my milk supply and semi-obsessing about whether or not he’s getting enough to eat. To help ease my mind, I’ve begun making these banana chocolate chip muffins which are chock-full of healthy, lactation-boosting ingredients. Best of all? They’re DELICIOUS, easy and THEY WORK.  I make a batch and just put them in a gallon-size ziplock in the fridge. When I need an easy breakfast or a little snack, I take one out, pop it in the microwave for 15 seconds and voila! Simple. This recipe makes about 9 regular sized muffins and is the perfect thing to make while meal prepping on Sunday because they’ll last you through the week!

This recipe calls for a few ingredients that you probably don’t already have in your pantry (brewer’s yeast and ground flax seed), but I just order mine on Amazon!

Ingredients:

  • 3-4 very ripe bananas
  • 1 tsp of vanilla
  • 1 egg
  • 2 Tbsp . GROUND Flax Seed
  • 1 tsp of baking soda
  • Pinch of Salt
  • 1 cup of flour
  • 1/2 cup of rolled oats
  • 2 Tbsp . Brewer’s Yeast
  • 1/3 cup of coconut oil , melted (or butter)
  • 1 cup of sugar
  • 1 cup of chocolate chips

Instructions:

  1. Preheat oven to 350.
  2. Spray muffin pan well (or use paper wrappers).
  3. In a large mixing bowl, mash up bananas. Add the melted coconut oil (or butter) and mix until blended.
  4. Add vanilla and egg and mix until blended, then add sugar and mix until combined.
  5. In a separate large mixing bowl, mix flour, baking soda, salt, Brewer’s Yeast and Flax Seed until blended (I sift together these ingredients to make sure everything is really well mixed)
  6. Add the banana mixture into the dry ingredients. Once well blended, mix in the rolled oats. Then add chocolate chips and mix well.
  7. Once all ingredients have been well combined, use an ice cream scoop to fill each muffin well about 3/4 of the way with batter. I also like to top mine with a spring of oats for decoration!
  8. Bake 25-30 minutes or until a toothpick inserted into the center of a muffin comes out dry.

    Truly yummy muffin. My daughter has low iron, so I substituted 1/2 sugar for blackstrap molasses and added 1/2 cup more flour to absorb liquid. Doubled the recipe, added walnuts but only used 1 cup of the chocolate chips and used raw cane sugar. Threw in some extra pumpkin seeds on some muffins. My daughter loved them! The overripe bananas, brewers yeast, flax meal were all things I was looking for in a recipe. Thanks!

      Thanks Ashley, they’re so good! Even my husband loves them 🙂 Good question – I’ve never tried to freeze, but I don’t see why they wouldn’t keep in the freezer for up to a month!

    So yummy! Have you tried baking them with whole wheat flour instead of all purpose?

      i have not, but i bet they’d be good! i might add a little applesauce for moisture if using whole wheat?

  5. My twins are due in a few weeks and I’ve been trying to batch cook and freeze as much as I can before babies arrive. Today I made a batch of these to put in the freezer – I couldn’t help myself and had to try one – they are so delicious! I didn’t add the sugar – that was the only change I made – they’re sweet enough from the bananas and chocolate chips. This recipe is a keeper! Hopefully they help with my milk supply

  6. I subbed a chia egg instead of the chicken egg and it turned out great! I do think it’s way too sweet so I’ll reduce the sugar next time, but overall a big fan of these!
