Every weekend I sit down and plan out dinners for the upcoming week and I thought it would be fun to share our menu with you guys from time to time. Hopefully it will offer a little bit of inspiration to your own weekly meals!
As far as groceries, I (almost) always buy our proteins in bulk at Costco. Chicken breasts, a type of fish and ground turkey are always added to our cart when we go, so I know that’s what I have to work with as far as planning meals. Then, usually on Sundays, we’ll head to the store for produce and anything else that we’re missing. For the most part, these recipes are fairly healthy. We don’t do any type of special ‘diets’ in our home, but I do try to keep meals fairly clean and nutritious. That being said, I usually leave room in the menu for one ‘take-out’ night to give myself a little break and to help make life a bit easier.
These recipes are all ones I found while perusing Pinterest and you can click on the photos to visit their original sites! I’ll share on Instagram Stories this week as I make them and let you know how they turn out so if you don’t already follow along, be sure to! Here’s what we’re making:
Chicken Soup

We actually made this chicken soup recipe last night with a few alterations and it was absolutely delicious – even Fischer thought so! I doubled the recipe so that we could have leftovers and used rotini noodles instead of couscous. Here’s the original recipe, with what I changed in red:
Ingredients
- 1 cup chopped onions about 1/2 of a medium
- 3/4 cup sliced leeks about 1 medium, white and light green parts only – I omitted leeks because I forgot to look for them at the store lol
- 1/2 cup sliced carrots about 1 medium
- 1/2 cup chopped celery about 2 ribs
- 1 tablespoon minced ginger
- 1 tablespoon minced lemongrass or paste – omitted because I couldn’t find
- 2 cloves minced garlic
- 1/2 teaspoon ground turmeric
- 4 cups chicken stock
- 8 ounces cooked chicken chopped or shredded (rotisserie chicken is great) – I put 2 frozen chicken breasts in the crockpot with a little stock, olive oil and seasonings and let it cook all afternoon. This made dinner SO QUICK and easy!
- 1 cup pearl couscous – used rotini noodles instead
- 1/2 of a lemon
- salt and pepper
- chopped fresh parsley for garnish

Heat one tablespoon of the stock in a 4 to 5 quart Dutch oven or stock pot over medium. When it begins to sizzle, add the onions, leeks, carrots, and celery. Saute until the vegetables are soft, about 6 minutes. Stir in the ginger, lemongrass, and garlic, and heat until aromatic. Sprinkle the turmeric over the vegetables and stir.

Add the stock, chicken, and couscous, and bring to a light boil. Reduce heat to maintain a gentle simmer; cook for 15 minutes. Squeeze the half lemon into the soup, taste, and season with salt and pepper to your liking. Top with parsley before serving.
Baked Breaded Tilapia

Tilapia and salmon are two of my favorite fish to eat. Unfortunately, G doesn’t share my enthusiasm about them so I have to find ways to dress them up a little. Hopefully he likes this recipe 😉 I plan to serve it with salad and mashed potatoes.
Turkey Chili.

Chili is one of my favorite cold weather dinners! I love to serve it with this corn casserole – definitely not the healthiest but hey, everything in moderation, ya know?
Chicken Quesadillas.

This is another recipe that I simplify by throwing chicken in the crockpot in the morning. I then shred it and use it to assemble the quesadillas and it makes this dinner so easy and fast to put together! We have quesadillas with different fixin’s on the side (jalapenos for G, shredded lettuce, sour cream and cheese).
Sweet Potato Sloppy Joes.

I absolutely love this healthy version of a childhood classic. This sloppy joe mixture is much healthier than the canned stuff – and so good!
Chicken Parmesean.

I make some sort of chicken parm rendition a couple of times a month because it’s one of my favorite chicken recipes. It’s also a great dinner to make for company because it’s inexpensive, easy and pairs well with just about any glass of wine 😉 I usually serve it with a salad and whole wheat penne pasta instead of spaghetti.
